Dudes, I am about to lay unto you the very best dessert you have ever eaten. My wife, known to me as She Who Doesn’t Cook Often, So You’d Better Enjoy It While You Can, made this dessert for our Fourth of July celebrations. That is, when we took a break from blowin’ stuff up, we got to sit down and savor the nirvana that is Peach Crisp. Seriously, this stuff is so easy to make and it tastes so very, very good.

Peach Crisp
The ingredients are pretty simple.
8 medium peaches, peeled and sliced
1/2 to 3/4 C sugar
2 Tbsp all-purpose flour
Topping: 1 C all-purpose flour
3/4 C sugar
1 tsp baking powder
1/2 tsp salt
1 large egg
1/2 C butter
Now, if you want to make this taste as good as possible, go find a farmer’s market to buy your peaches. The little dudes and I went down to South Carolina and a great peach stand for our purchases. The end result was well worth the trip.
Once you’ve got all your ingredients gathered and your peaches sliced and peeled, you’ll need to warm the oven to 375 degrees.
Preheat oven to 375 degrees
Measure out the sliced peaches. Combine peaches and about .5 cup sugar (add more if the peaches aren’t very sweet). Add 2 Tbsp flour and mix to distribute. Put peaches into an ungreased 8-inch square baking pan or 1.5 quart baking dish.
Mix together 1 cup flour, .75 cup sugar, baking powder and salt. Beat egg and add to the flour mixture. Using your hands or a fork, gently mix the egg into the flour until the egg evenly moistens the dry ingredients. Be sure not to press the dough into one solid mass. The topping should be loose and crumbly.
Sprinkle the crisp topping evenly over the fruit. Melt the butter in a small saucepan or in the microwave, then spoon it over the topping so it is evenly coated.
Place crisp on the center rack of oven and bake for 30 minutes, or until top is a deep golden brown and fruit is bubbling. Serve warm.
