Spaghetti To Die For

You dudes are lucky. I went for most of my life without knowing this recipe and I can’t believe how much I missed it. See, my father-in-law is a fantastic cook. He’ll whip out these dinners that I can’t believe didn’t come from some four-star chef like they were nothing.

Fortunately, he’s into sharing. And so am I. You dudes are going to love this recipe. I like to call it Grandpa’s Spaghetti. It’s all about the homemade sauce. Yes, I’m going to teach you dudes how to make your own meat sauce that will have your family raving about it for weeks afterwards.

Here’s what you’ll need to get started.

Four cans of tomato sauce.

Four cans of tomato paste

1 pound of ground beef

1 pound of ground Italian sausage

1 onion, chopped finely

3-4 cloves of fresh garlic, chopped

red wine

sugar

You’re also going to need something big to cook the sauce in. I normally use a large electric griddle, but you can use whatever you want.

Pour in some olive oil and turn on the heat. Cook the onions and garlic for a few minutes until it gets nicely fragrant. Add the beef and sausage, cook and crumble the meat. Once the meat is brown, turn off the heat and pour off the grease. Return the pan to the heat and then pour in some red wine, not a lot, but enough to get some on most of the meat. You’ll want to use a good red wine, because the better the wine you use when you’re cooking, the better it all tastes in the end.

Cook and stir the meat mixture until the red wine is gone. It will leave behind the flavor, but you don’t want the excess moisture.

Open the cans of tomato sauce and pour them in. Mix it all up. Then pour in four cans full of water. Do the same thing with the tomato paste and four cans of water from the paste. Mix well and then bring it all to a boil.

Once it its a boil, turn the heat down to simmer and let it get to work.

You’re going to want to let the sauce simmer down for hours, really. You want to cook until the sauce thickens enough to really look like good sauce. Stir a lot while it’s cooking.

When you figure the sauce is just about thick enough, then you need to start adding sugar. The sweetness of the sugar will cut against the bitterness of the tomatoes. Don’t put too much sugar in all at once. You’ll want to add sugar, stir it in, let it cook for a few minutes and then taste. Do this until you’ve got the perfect taste.

After that, cook the pasta and garlic bread and get the salad ready.

The great thing about this sauce is you can also use it in a baked ziti or a fantastic lasagna.
